This commit introduces a new service, DollySearchService, to enable searching and retrieving person information through Elasticsearch. It includes configurations, REST endpoints, DTO mappings, Elasticsearch queries, and related utility classes.
Introduced DTOs, enums, and repository for the Dolly Search Service to support OpenSearch operations. Added `PdlPerson` model and Elastic search consumer for indexing and query updates. Included necessary Gradle wrapper and configurations for the project build.
Deleted several unused models and associated logic to enhance code maintainability. Refactored search services to use reactive programming with Mono and improved query execution while preserving compatibility with OpenSearch.

Removed dependencies and unused classes related to Elasticsearch. Disabled and commented out portions of the codebase referencing Elasticsearch components to streamline the transition. Added a new local OpenSearch configuration for testing connectivity and query-building improvements.
Adjusted OpenSearch queries to use nested structures and introduced utility methods for common query patterns. Enhanced error handling in search operations and updated data models to support additional attributes.
