Graph docs cleanup 202501

The knowledge graph tools within RAGStack have been superseded by another project. This PR makes changes to the graph-related docs, instructing users to visit the new project.

Also, we are deleting code and references to packages that are outdated, while leaving some useful explanatory content for now, so the pages don't disappear entirely and may be discoverable in search.

Because we have blogs and other external content that links directly to these pages, we want all incoming links to the former graph RAG pages to lead to the one remaining graph RAG page.
