Update GHA workflows to gha-ios-5.3.0

Description

This PR:

• Updates the GHA workflows to gha-ios-5.3.0 and leverages the new build and test feature to specify a custom directory/specific path for .xcresult
  • Reverts change to Makefile to use default derived data and .xcresult locations
• Fixes incorrect build library for distribution flag from BUILD_LIBRARIES_FOR_DISTRIBUTION -> BUILD_LIBRARY_FOR_DISTRIBUTION
• Updates Gemfile.lock to be generated by bundler version 2.5.23 (default on macos-14 runner)
