Is it possible to the chance the colour of HEAD to something that stands out a bit more?

At the moment, it's difficult to find HEAD in the commits view. I realize I can use the branches view to view only the commits starting with HEAD, however, I often like to see where HEAD is in relation to other commits. In which case I am forced to search for it.

Is it possible to highlight HEAD somehow or at least change its colour so that it stands out?

It sounds like you are using the git.log.showWholeGraph config. Is this on purpose, or did you turn that option on accidentally? I recommend against using it, because it's unfortunately broken in many ways (see #3608, which lists only some of the problems).

If you turn that option off, the head commit is always at the top of the commits panel.

It is on purpose. I would like to see the complete graph so that I can see where other branches are in relation to mine. This is useful in many scenarios including when cherry picking, rebasing, or just checking how behind I am when compared to dev or main.

Is there another window where I can observer the whole graph?

I see. Well, you can see the whole graph by going to the status panel (1) and pressing a there. You can also make this the default view in the status panel (if you don't care about the normal status view) by using

gui:
    statusPanelView: allBranchesLog

Also, you probably want to customize the all branches log to be one line per commit by using something like

git:
  allBranchesLogCmd: git log --graph --all --color=always --abbrev-commit --decorate --oneline --

I admit that the graph doesn't look quite as nice as down there in the commits view.

or just checking how behind I am when compared to dev or main

For this I recommend to set gui.showDivergenceFromBaseBranch to arrowAndNumber, then you see this information right in the branches panel for every branch. I find this indispensable. You probably want to set git.mainBranches to something like [master, main, dev]; by default it only includes master and main.

And finally, to see how a given branch diverges from main or dev (whichever is closer), you can press u b on any branch in the branches panel.
