The example provided only works if there are no sub-paths.

In my case I needed to redirect everything under snap-in-development to snapin-development. The given example worked for snap-in-development/concepts but not for snapin-development/references/adaas.

There is a link to the regexp documentation but it was not clear to me how to apply it.

How should this be improved?

I think that my case would be common case, so I'd suggest changing the example to add a wildcard:

  - source: "/old-folder/:slug*" # <- using regex
    destination: "/new-folder/:slug*"
