Tidy up 2025 model

Some final, non-urgent tasks that we need to close out in order to wrap up the 2025 model:

• Update the model.final_model seed in data-architecture to include metadata for the res and condo models
  • PR: Add 2025 final models to model.final_model table data-architecture#734
• Take a pass through the res model README to make sure everything is up to date for the 2025 model
  • PR: Update README and default run_id for 2025 #352
• Take a pass through the condo model README
  • PR: Update README for 2025 model-condo-avm#108
• Add explanation of building means feature to condo model README: Add explanation of building means feature to README model-condo-avm#105
• Make sure the vars_dict data in the ccao package is up to date for 2025 features
  • PR: Add descriptions for building rolling means features to README model-condo-avm#107
• Merge 2025-assessment-year res model branch into main, then tag the commit with 2025-assessment-year
• Once 2025 res model is merged to main, re-knit README for condo model so that the column identifying features that are unique to the condo model is correct
• Merge 2025-assessment-year condo model branch into main, then tag the commit with 2025-assessment-year
