Fix compostable stable create pool test intermittently failing #607

test/v2/createPool/composableStable.integration.test.ts will fail intermittently

createPool transaction itself will revert, so the create pool event won't be found in logs, throwing an error

suggestion: report issue on foundry/anvil repo so they can help investigate
