Backend Post Route + Edit Profile #14

Task

Create post route on backend to create a user profile
Secondary task: create put route on backend to update user profile with newly submitted info
Note that both of these tasks are purely backend tasks, no frontend component required
Test using Postman (can reach out to Jordan/Yoto if need help)

Future Work

Tertiary task: start creating frontend for edit profile according to Figma
